Flobee’s Roadside Stand resides in the historic Carvel building in Ridgefield, CT on Route 7. It’s housemade menu aims to bring you the best of southern food with the nostalgic experience of New England’s iconic roadside stands. Flobee’s was founded in 2024 by local Ridgefield couple, Nadia and Aaron Blair.  

Nadia is East Coast through and through - growing up eating from NYC to Provincetown, but wanderlust took her across the country to San Francisco, California and then to Austin, Texas where she met Aaron.  Aaron was in Austin running one of the city’s early food trucks in 2009, after leaving the fine dining scene after nearly a decade. Flash-forward 15 years, five kids, and one cross country move to Nadia’s favorite town, and Flobee’s was born. 

Named for Aaron’s mother Florence, Flobee’s is a love letter to all the foods and experiences Nadia and Aaron miss about living in the south and can’t wait to share with all of you. Our newly added outdoor dining area is a nod to all of the amazing, family-friendly outdoor dining experiences all over Austin with picnic tables, umbrellas, yard games (and brand new bathrooms!).  

Every item on the menu means something special to them: the burger is the same recipe Aaron was making in the trailer in Austin with his partner Ric (he's here too!), the fried chicken is the recipe Nadia developed in their home kitchen for their friends and family, the Snowbees are reminiscent of the snowballs their kids dripped  down their chins on benches on the East Side on hot summer days.
